Oman today_ Olives have a naturally bitter taste and require processing before consumption. Various methods have been used over time to prepare and preserve them, many of which remain popular today. The following are five reliable methods for preparing and storing olives:
1. Basket Method: In this approach, fresh olives are placed in a clean basket or bag along with coarse salt. Over time, the bitter liquid from the olives drains out, and the collected liquid is discarded every few days. This process takes approximately 2 to 3 weeks, after which the olives are ready for consumption or pickling.
2. Homemade Brined Olives: Olives are combined with crushed salt and a small amount of olive oil in a glass jar. The jar is shaken daily for 15 days to help the olives release their liquid. This method preserves the olives for up to one year. Flavor can be enhanced with additions such as lemon juice or thyme.
3. Green Olive Preparation: Green olives are lightly crushed and submerged in a container of water. The water is replaced several times over roughly two weeks to reduce bitterness. After this period, the olives are stored in olive oil.
4. Practical Olive Method: In a large jar, olives are mixed with sugar, vinegar, sunflower oil, and salt. The jar is shaken daily, and after about six months, the olives are ready to eat. Initially, they may taste slightly bitter, but over time they develop a pleasant flavor.
5. Salt-Free Olives: A newer method, used in some countries like Turkey, produces olives without any salt. This process reduces preparation time to less than a day while maintaining a shelf life of up to one year. Salt-free olives are considered a healthier option, especially for individuals with heart, kidney, or blood pressure concerns.
