Oman today_ One of the most traditional and flavorful Mexican dishes made with chicken is chicken enchiladas. This dish is not only rich in taste but also packed with protein and essential nutrients, earning its place among Mexico’s most beloved and distinctive meals. Preparing the ingredients takes less than 30 minutes, and the cooking process typically requires 30 minutes to an hour for the dish to be fully done and flavorful.
To begin, it’s important to soak the beans at least 24 hours in advance, changing the water several times to reduce bloating. Then, cook the red or black beans separately. Preheat the oven to 200°C (about 390°F) so it’s ready when you assemble the enchiladas.
Cut 700 grams of chicken fillet into thin strips, and sauté them with one chopped onion, two minced garlic cloves, and a bit of olive oil. Once the chicken changes color, add 2.5 tablespoons of tomato paste and cook everything together until well combined.
Next, dice one bell pepper and add it to the mixture. If you’d like to stay true to the traditional spicy Mexican flavor, add some chopped chili pepper at this stage. Then add 1 cup of cooked (or canned) corn and one can of drained cooked beans. Mix everything thoroughly and cook until all the flavors are blended. Once the mixture is ready, turn off the heat and prepare the enchilada sauce.
To make the sauce, heat some olive oil in a pan and add 2 cups of tomato purée. After a few minutes, add 1 tablespoon of cornstarch and stir constantly to prevent clumping. Season with salt, black pepper, paprika, ground coriander, and thyme. Finally, add 1 tablespoon of lemon juice and let the sauce simmer until slightly thickened. Remove from heat.
Prepare 4 tortillas or pita breads. Place a portion of the filling onto each one, sprinkle with a mix of shredded mozzarella (1.5 cups) and cheddar cheese (1 cup), and roll them up. Spread a thin layer of enchilada sauce in the bottom of a baking dish, arrange the rolls inside, and pour the remaining sauce over the top. Cover everything with the remaining cheese mixture and bake until the cheese is melted and slightly golden.
Once baked, your chicken enchiladas are ready to serve—a warm, hearty, and perfectly spiced dish that brings together flavor, comfort, and a touch of Mexican tradition.
