Oman today_ Baku Quymaq, also known as “Baku Kachi,” is a traditional and nutritious dessert from the Baku region of Azerbaijan. Made with a combination of flour, butter, sugar, and aromatic spices, this dessert is especially consumed during recovery periods or postpartum to strengthen the body. To prepare this delightful dish, you will need 150 grams of butter or clarified butter, 1 small cup of white flour, 2 small cups of lukewarm water, 1 teaspoon of salt and turmeric, sugar or grape molasses to taste, and ground cinnamon for garnish. Melt the butter in a non-stick pan over low heat, add the flour, and sauté for about 2 minutes until the raw smell of flour disappears. Stir in the turmeric, salt, and sugar, gradually add the lukewarm water while breaking up lumps with the back of a spoon to achieve a smooth mixture, lower the heat, and allow the mixture to cook undisturbed until the water evaporates and a golden crust forms at the bottom. Once cooked, roll the dessert from one side and transfer it to a serving dish, top it with a sprinkle of ground cinnamon, and serve warm or cold. With its sweet taste and soft texture, Baku Quymaq is an excellent choice for gatherings and special occasions.
