Oman today_ Moussaka is one of the traditional and highly popular dishes of the Mediterranean and Middle Eastern regions, especially Greece and its surrounding countries. This dish, made with layers of eggplant, potatoes, and ground meat combined with béchamel sauce, offers a delicious and rich flavor. It is commonly served in many homes and restaurants as an authentic and tasty meal.
To prepare moussaka, start by slicing 3 medium eggplants and 2 medium potatoes into rounds. Sprinkle the eggplant slices with salt and let them sit for 30 minutes to remove any bitterness, then rinse and pat them dry. Fry the potatoes and eggplants separately in hot oil until golden brown. Meanwhile, sauté one large chopped onion in a little oil until soft and golden, then add two minced garlic cloves and cook briefly. Add 400 grams of ground meat (lamb or beef) to the pan and cook until browned. Next, stir in 2 tablespoons of tomato paste, half a cup of chopped tomatoes (optional), one small chopped bell pepper, and 50 grams of chopped mushrooms. Season with salt, black pepper, 1 teaspoon dried thyme, and half a teaspoon paprika. Let the mixture simmer on low heat until thickened.
For the béchamel sauce, melt 40 grams of butter in a pan and stir in 3 tablespoons of all-purpose flour. Cook the mixture until the raw flour smell disappears. Gradually add 2 cups of milk, stirring continuously until the sauce thickens and becomes smooth. Season with salt and white pepper to taste.
In a suitable baking dish, layer the fried potatoes first, then the eggplants, followed by the meat mixture, and top with another layer of eggplants. Pour the béchamel sauce evenly over the top and sprinkle half a cup of grated cheese (such as mozzarella or Parmesan). Bake in the oven at 180°C (350°F) for 40 to 45 minutes until the top is golden and nicely browned.
