Oman today_ Gulab Jamun is one of the most popular Indian desserts, also known in other countries such as Pakistan, Nepal, and Bangladesh. This dessert consists of small, deep-fried balls made from soft and sweet dough, soaked in rose syrup.
To make Gulab Jamun, start by preparing the syrup. In a saucepan, mix water and sugar and heat on low until the sugar is completely dissolved. Then add lemon juice, cardamom, rose water, and saffron, and let the mixture come to a boil and thicken slightly (about 20 minutes). Once done, remove the syrup from the heat and let it cool.
Next, for the dough, sift the flour, milk powder, and baking powder together. Then add the butter and milk to the mixture and stir with a spoon until a slightly sticky dough forms. Cover the dough and let it rest for 20 minutes.
Then, heat oil in a deep pan over low heat. Lightly grease your hands and take a small amount of dough, slightly larger than a hazelnut, and roll it into a ball. Fry the dough balls in the hot, floating oil until they turn golden brown. Once fried, drop the balls into the cooled syrup and let them soak for at least 2 hours so they absorb the syrup completely.
A key tip in making Gulab Jamun is to gently rotate the balls in the oil while frying to ensure they cook evenly and attain a golden color. Additionally, you can adjust the amount of sugar and rose water to suit your taste.
