Oman today_ Spätzle is a type of fresh, egg-based noodle that originates from southwestern Germany and the surrounding regions, and it is also popular in Austria and Switzerland. These noodles are irregular in shape with a soft, chewy texture and are typically served alongside meat dishes with sauces or stews. They can also be enjoyed as a main dish with cheese or sautéed onions. The basic ingredients for making Spätzle include all-purpose flour, eggs, salt, and water or milk, and depending on the recipe or personal preference, nutmeg and white pepper can be added for extra flavor. To prepare the dough, flour and salt are mixed together, then eggs and milk or water are added to form a batter similar in consistency to thick pancake batter, which is then allowed to rest for 10–20 minutes. For cooking, salted water is brought to a boil, and the dough is either pressed through a Spätzle maker, a coarse sieve, or cut from a board into the boiling water in irregular pieces. When the noodles float to the surface, they are cooked and can be removed with a slotted spoon and drained. After cooking, Spätzle is typically tossed with butter or oil to prevent sticking and can be served with cheese, sautéed onions, or mushroom sauce. This dish is popular both as a side for meat dishes and as a complete meal when combined with cheese and onions, and in the version known as Käsespätzle, it is somewhat similar to German-style macaroni and cheese.
