Oman today_ For this delicious and traditional cookie, you’ll need the following ingredients:
3 large egg yolks (at room temperature), 3 tablespoons granulated sugar, 3 tablespoons heavy cream, ½ teaspoon ground cardamom, 1 to 1¼ cups all-purpose flour (as much as needed to form a rollable dough), oil for frying, and confectioners’ sugar for dusting.
Instructions:
Start by beating the egg yolks and sugar together until the mixture becomes pale and creamy. Add the cream and cardamom, and mix well. Gradually add the flour until a dough forms that can be rolled out with a rolling pin.
Lightly flour your work surface and roll the dough into a square, approximately 15 inches (about 38 cm) wide. Cut the dough into 10 strips, each about 1.5 inches (4 cm) wide. Then cut each strip diagonally into 6 smaller pieces, each around 2.5 inches (6 cm) long. Make a 1-inch (2.5 cm) vertical slit in the center of each piece, then pull one end of the dough through the slit to create a bow shape.
Heat oil in a deep pan or fryer to 375°F (190°C). Fry the bows in batches, a few at a time, for 20 to 40 seconds, until both sides are golden. Transfer them to paper towels to drain excess oil. Finally, dust them with confectioners’ sugar and serve.
