Oman today_ Chicken Tikka Masala is one of the most popular Indian dishes around the world, known for its bold, warm, and rich flavor. The name itself reflects its components: “Tikka” means small pieces (in this case, chicken), and “Masala” refers to a mixture of spices. The key to its appeal lies in the complex aroma of layered spices, the vibrant color, and the tender texture of the yogurt-marinated chicken.
Before you begin cooking, it’s best to prepare garam masala, the essential spice blend that forms the foundation of the dish. To make it, combine 2 teaspoons black cumin powder, 2 teaspoons ground cinnamon, 3 teaspoons ground coriander seeds, ¾ teaspoon ground cloves, 1 teaspoon ground green cardamom, ¾ teaspoon freshly grated nutmeg, ½ teaspoon red chili powder, and 1½ teaspoons black pepper. Toast the mixture over low heat for about 2 to 3 minutes until fragrant, then store it in an airtight container in a cool, dry place. It can be used for up to three months.
To serve four people, start by cutting 300 grams of boneless, skinless chicken breast into small cubes. In a separate bowl, mix 1 cup plain yogurt, 1 teaspoon fresh lemon juice, 2 cloves of grated garlic, 5 grams grated fresh ginger, half the prepared garam masala, and a pinch of salt and pepper. Add the chicken pieces, coat them well, cover, and let them marinate in the refrigerator for at least 2 hours so the flavors can fully absorb.
Meanwhile, melt 2 tablespoons of butter in a deep pan and sauté 1 medium chopped onion along with a little garlic until golden. Add the marinated chicken pieces and sauté for a few minutes until lightly browned. Then stir in the remaining spices: 1½ teaspoons garam masala, 1 teaspoon turmeric, and 3 tablespoons tomato paste, and cook for about a minute to eliminate the raw taste of the paste.
Next, pour in 400 grams of tomato purée and 1 cup chicken stock. Adjust salt and pepper to taste, bring the sauce to a boil, then reduce the heat. Let it simmer gently for about 10 minutes until the chicken is fully cooked and the sauce thickens. In the final minute of cooking, stir in ½ cup heavy cream to give the sauce a rich, creamy consistency.
Finally, serve the Chicken Tikka Masala in a dish and garnish with chopped fresh parsley. It pairs beautifully with plain steamed rice, naan bread, or chapati — a perfect way to enjoy the authentic essence of Indian cuisine.
