Oman today_ Kuymak (Kuymak), also known as Mihlama (Mıhlama) in some regions of Turkey, is a traditional and delicious breakfast dish from Turkey’s Black Sea region. It has a stretchy texture with a buttery and cheesy flavor and is usually served with fresh bread.
To prepare this dish, start by melting 2 tablespoons of butter in a pan over low heat. Then, add 2 tablespoons of cornmeal to the melted butter and stir for about 1 minute until the raw smell disappears. Gradually add 1 cup of water (approximately 250 ml) while stirring constantly to create a smooth mixture.
Next, add 150 grams of grated or chopped Kashar cheese or local Trabzon cheese to the mixture and stir until the cheese completely melts and the mixture becomes stretchy. Allow the dish to simmer gently until the surface becomes slightly oily. Kuymak is now ready to be served.
Serve it warm and fresh, accompanied by bread or simit. This simple yet delightful dish is an excellent choice for breakfast or as a snack, offering a unique experience of traditional Turkish cuisine.
